Chocolate Cheesecake

With remarkably few ingredients and a whiz to make, this cheesecake is a must for any chocoholic!

  • base - see note below
  • 400 g dark chocolate
  • 250 ml double cream
  • 250 g cream cheese, such as Philidelphia
  • 250 g mascarpone

Chocolate Cheesecake Directions

  1. Base line a 23cm spring-form cake tin with kitchen parchment.
  2.  1. Make biscuit base - see note below
  3. 2. Melt the chocolate either over a pan of simmering water or in the microwave on 600W for about two minutes. Leave to cool
  4. 3. Beat the cream, cream cheese and mascarpone together until beginning to stiffen.
  5. 4. Stir the chocolate into the cream mixture making sure it is evenly mixed.
  6. 5. Pour over the biscuit base, pressing down and smoothing the top with the back of a metal spoon.
  7. Chill, serve and enjoy!
