Piquant Nuggets

These are chicken nuggets for grown-ups when you really want that comfort touch - forget the calories and serve with salad, guacamole and freshly fried chips.

For 2 people


  • 2 bonless, skinless chicken breasts cut into nugget sized pieces
  • flour
  • seasoned flour
  • 1 egg, beaten with 1 tbs water
  • 50 g polenta (cornmeal)
  • 1 tsp cumin
  • 1/2 tsp cayenne pepper - or to taste
  • pinch smoked paprika
  • freshly milled balck pepper
  • oil

Piquant Nuggets Directions

  1. In a medium-sized mixing bowl combine the polenta, cumin, cayenne, smoked paprika and pepper. Toss the cubed chicken in the flour. Dip the floured chicken into the beaten egg, making sure it is well coated, then drop into the bowl containing the polenta and spices. Ensure all the nuggets are blanketed in the mix. Either shallow fry in olive oil or use a deep-fat fryer to cook until golden and crunchy.
