Turkey Escalope with Spinach & Mayo

Turkey escalopes make an almost instant meal - they are so quick to cook. This idea originates from an American recipe where the mayo keeps the meat succulent and forms the basis of a sauce, though you obviously have to like the flavour of mayonnaise!

  • 4 turkey escalopes
  • 4tbsp mayonnaise
  • handful of baby spinach leaves (or defrostedand squeezed)
  • handful of grated cheese
  • paprika

Turkey Escalope with Spinach & Mayo Directions

  1. Preheat the oven to 180 degrees C
  2. 1. Place the escalopes on a baking tray which is lined with baking parchment. Scatter with the spinach leaves then spread a heaped tbs of mayonnaise over each one.
  3. 2. Sprinkle with grated cheese and paprika.  Bake for about 20 minutes and serve.
