Healthy Brunch Muffins

  • 2 cups -250 g- dates, chopped
  • 1 cup wholemeal flour
  • 1 cup High Grade plain flour
  • 2 heaped teaspoons cinnamon
  • 2 teaspoons baking soda
  • pinch salt
  • 1 cup soft brown sugar
  • 1 cup sunflower/vegetable oil
  • 4 eggs - or 2 eggs and half cup plain yoghurt
  • 1 tablespoon Cointreau, Grand Marnier or Brandy
  • 2 medium carrots, grated - or small tin pineapple, chopped and drained

Healthy Brunch Muffins Directions

  1. Put dates in a bowl with some warm water and let them soak. Drain. Sift and mix all dried ingredients. If you use the yoghurt option, dissolve soda in the yoghurt. Add oil and stir well. Stir in beaten eggs (and yoghurt if that is your option). Add carrots and dates and fold into wet mixture.
  2. Bake in muffin tins at 180c / 350F until cooked (about 20-30 mins; depending on size).
