Fish Cakes

Always searching for different ways of serving white fish to my children, this recipe is both economical and easily prepared the night before; a ready meal awaiting you.

For 6 people


  • 200 g mashed potato -about 2 medium
  • butter
  • 200 g white fish fillet -boned
  • 1 tbs chopped parsley
  • flour for dusting
  • 1 egg, beaten
  • breadcrumbs

Fish Cakes Directions

  1. 1. Melt the butter into the mashed potato - to speed up this recipe I microwave 'bake' the potatoes, skin, then mash. This produces a really smooth finish.
  2. 2. Using either a hand blender or food processor, pulse the fish fillets until smooth.
  3. 3. Using a metal spoon, fold the fish and parsley into the potato, ensuring all is evenly distributed.
  4. 4. Using floured hands, divide into 6 even parts and roll into balls. Flatten and shape into cakes about 1cm thick. Dip into egg then breadcrumbs, re-shape and chill until ready to serve.
  5. 5. Gently sauté until golden in olive oil.
  7. Use whatever white fish is on special offer at the market.
