Couscous Crusted Salmon

Cut through the crispy yellow crust into succulent pink salmon, the natural oils from the fish oozing into the couscous to produce this wonderful topping.

  • 50 g couscous
  • ground black pepper
  • 1/2 tsp turmeric
  • chopped dill
  • 100 ml boiling water
  • 4 salmon fillets

Couscous Crusted Salmon Directions

  1. 1. Place the couscous, black pepper, turmeric, and dill into a small bowl. Pour over the boiling water and set aside until all the water has been absorbed.
  2. 2. Meanwhile, skin and pin-bone the salmon fillets. Place on a baking sheet.
  3. Preheat the oven to 180 degrees C
  4. 3. Fork the couscous to mix and fluff. Spread evenly along the top of each salmon fillet.
  5. Bake in the pr-heated oven for 15-20 minutes until cooked.
