Tomato, Basil & ChickenTortilla Pizza

Full of summer flavour and ready in a jiffy, simply serve with a crispy salad.

For 4 people


  • 4 flour tortilla
  • 4 heaped tsp basil pesto
  • sauce -optional
  • 200 g sunblush tomatoes
  • basil leaves, roughly torn
  • 2 chicken breasts, cookedand roughly cubed
  • 1 ball mozarella, divided intofour
  • grated cheese

  2. Pre-heat oven to 200 degrees C
  4. 1. Place each tortilla on a pizza tray. Mix the pesto with chilli sauce (to taste) then spread a heaped teaspoonful over each.
  5. 2. Divide the tomatoes, torn basil leaves and chicken cubes between each pizza. Top with torn mozarella and a little grated cheese.
  6. Bake until piping hot and cheese is melted - about 10 mins.
