Citrus Marinated Salmon

As if by magic, the juice from the lemon and lime cooks the salmon before your eyes - watch its colour transform to a beautiful dusky pink. Fear not, the zesty marinade is to add summery flavour and to be popped into a hot oven. Serve with a crisp salad and fresh crusty country bread.

  • 4 salmon fillets, bonedand skinned
  • 1 lemon, zest and juice
  • 1 lime, zest and juice
  • 1/2 tsp ginger pulp or about 1/2cm grated fresh ginger
  • 2 tbs basil infused olive oil
  • black pepper

Citrus Marinated Salmon Directions

  1. Preheat the oven to 180 degrees C
  2. 1. Place the salmon fillets into a non-metallic oven-proof dish. Using either a zester or the fine side of a grater, remove the zest from the lemon and lime. Take care not to include the bitter white pith. Reserve.
  3. 2. Whisk together the juice from the lemon and lime, ginger pulp and olive oil. Pour over the salmon fillets and sprinkle with the zest and pepper.
  4.  Leave to marinate for about 1/2 hour, making sure you baste frequently . Bake in the preheated oven for about 20 minutes until the salmon is cooked.
