Quick & Easy Elderflower Cordial

I was delighted to receive a telephone call from Pat, a friend who also has a home in the southern French village of Bouisse. Unbeknown to us, our garden was awash with elderflowers, so permission was sought to collect then transform them into a delicious summery Elderflower Cordial. Use as wonderful flavouring for fruit dishes or simply dilute with sparkling water or add to gin and soda, then sit back dreaming of blue skies and sunshine!

  • 2 kg sugar
  • 1.25 litres boiling water
  • 25 elderflower heads
  • 80 g citric acid*
  • 2 lemons, grated and then sliced

Quick & Easy Elderflower Cordial Directions

  1. 1. Shake Elderflower heads to ensure they are free of insects then place the water into a large saucepan and bring to the boil.

    2. Add the sugar and stir until dissolved followed by the grated lemon and slices, plus the citric acid.

    3. Place the Elderflower heads in a bowl and pour over the boiling water, mixing well. Cover with cling film and leave for 12 to 18 hours.

    4. Sieve the liquid to remove the solids then strain the liquid through muslin, or a coffee filter to clarify.
