Roasted Haricot Verts with Cherry Tomatoes

Summer or winter, this is my faithful vegetable dish. The quantities are moveable according to how hungry you feel and any other additional accompaniments you may wish to serve.

For 2 people


  • 3 or 4 handfuls haricot verts -French beans, toppedand tailed
  • cherry tomatoes
  • oil
  • ground black pepper

Roasted Haricot Verts with Cherry Tomatoes Directions

  1. Pre-heat the oven to 200 degrees C
  3. 1. Wash, drain and dry the vegetables using absorbent paper.
  4. 2. Line a baking tray with kitchen parchment and spread the haricot verts and tomatoes in a single layer, sprinkling with black pepper. Drizzle with olive oil and pop into the hot oven.
  5. Roast for about 15 -20 minutes until the haricots are just beginning to brown and are still a little crunchy.
