Serrano Wrapped Pork Loin with Garden Herbs

Tender spring herbs from the garden are just perfect in the kitchen. Wrap a bouquet of aromatic rosemary and bay with salty Serrano ham and oven roast with pork loin. Serve with a tomato salad and fresh bread, perfect for lunch in the garden.

  • 750 g pork loin
  • of rosemary and bay
  • wafer thin Serrano ham - about 5-6 slices

Serrano Wrapped Pork Loin with Garden Herbs Directions

  1. Pre-heat oven to 200 degrees C
  3. 1. Wipe the pork with absorbent kitchen paper then place in a roasting tin, garnished with the herbs.
  5. 2. Overlapping as you go, wrap slices of Serrano ham around the pork and herbs, tucking in underneath.
  6. 3. Roast in the pre-heated oven for about 1 hour until the pork is fully cooked - the juices run clear then remove and rest for about 15 minutes before slicing and serving.
