Citrus Sauté Chicken

Aromatic flavours of citrus team deliciously with basil and a dash of chilli, though do marinade overnight to both tenderise and allow the full flavours to develop. Sauté or barbecue, both are delicious; serve with a salad such as Bean, Feta & Mint which features in the photograph.

For 4 people


  • 1 lemon, zest finely chopped & juice
  • 1 lime, zest finely chopped and juice
  • 2 garlic cloves, crushed
  • 2 tbs olive oil
  • milled black pepper
  • few leaves basil, chopped
  • dash of chilli sauce -to taste
  • 1 dash ofchilli sauce -to taste
  • 4 chicken breasts, chunked into 6 or 8 pieces

Citrus Sauté Chicken Directions

  2. 1. Whisk together all the marinade ingredients.
  3. 2. Chunk the chicken breast and place in a single layer in a non-metallic dish. Pour over the marinade, cover with cling wrap and chill overnight.
  4. 3. To sauté: Heat a little more oilve oil in a frying pan, add the chicken and cook for about 10 minutes. Alternatively, thread onto skewers and barbecue, turning once.
