Tex Mex Dip

Described as a dip, but is midway between this and a party salad. Serve in a straight edged glass bowl which beautifully displays the colourful layers.


For 12 people


  • 3 avocados
  • 2 tbs lemon juice
  • 250ml sour cream or creme fraiche
  • 125 ml mayonnaise
  • seasoning mix, to taste
  • 1 can refried beans
  • 3 spring onions, chopped
  • 3 tomatoes, seeded and chopped
  • 400 g can black olives, stoned and chopped
  • 200 g grated strong cheese

Tex Mex Dip Directions

  1. Mash the avocados together with the lemon juice. Mix togehter the cream, mayonnaise and taco seasoning. Spread the refried beans into the base of a serving dish and top with the avocado. Spread the cream mixture over the avocado then sprinkle the rest of the ingredients on top, cover and chill before serving.
