Fragrant Roast Lamb

Chunks of herb-fragrant lamb served with a crisp salad is perfect for a relaxed lunch with friends. I have used Basil & Walnut Pesto, but failing this your favourite brand could be used as a substitute.

  • 1 leg lamb
  • 2 cloves garlic, peeled,
  • salt
  • couple of sprigs of fresh rosemary
  • 2 heaped tsp Basiland Walnut Pesto

Fragrant Roast Lamb Directions

  1. pre heat the oven according to roasting times
  2. 1. Using a mortar and pestle, crush together the garlic and salt, adding the rosemary to form a squishy paste. Mix in 2 heaped tsp of pesto.
  4. 2. With a sharp knife, score the surface of the lamb then rub in the herb paste, working into all the crevices.
  5. 3. Check roasting times and bake the lamb, allowing to rest, covered, for 10 minutes before serving. If you prefer a warm salad this is delicious with either the Gratin of Aubergine, Tomato & Peppers or Warm Tomato Salad.
