Fruity Spice Rolls

These are seriously fruity, spicy and addictive to enjoy with breakfast or an afternoon cuppa.

  • 350 g white bread flour
  • 100 g wholewheat flour
  • 2 pkts fast action dried yeast -10 g
  • 0.5 tsp salt
  • 25 g sugar
  • 1 tsp mixed spice
  • 1 tsp ground cardamom
  • 1 tsp ground cinnamon
  • 175 ml milk
  • 75 g butter
  • 1 egg, beaten
  • little beaten egg mixed with 1 tsp maple syrup or honey

Fruity Spice Rolls Directions

  1.  Mix together the flours, dried yeast, salt, sugar and spices. Heat together the milk and butter until the butter has melted ( a minute or so in the microwave) and allow to cool to blood temperature, which means if you dip in your finger the liquid feels neither hot nor cool. Mix in the beaten egg to the dry ingredients and enough of the warm milk and butter to make a slightly sticky dough.
  2. Turn onto a lightly floured surface and knead 5-10 minutes to make a smooth elastic dough. Return to the bowl, cover with cling wrap and leave in a warm place to prove for about an hour until the mixture has doubled in size.
  4.  Turn out and divide into 12 equal parts, shaping into rolls, placing onto a parchment lined baking sheet. Leave again for about an hour to double in size.
  5.  Preheat the oven to 220 degrees C
  6. Brush with the glaze then bake about 15-20 minutes until risen, golden and sounds hollow when tapped.
