Braised Chicken &Tomatoes

Delicious served hot or cold, Braised Chicken and Tomatoes are versatile and great for dinner, lunch on the patio or even a special occasion picnic.

For 6 people


  • for cooking
  • 2 onions, chopped
  • 1 clove garlic, crushed
  • 6 breasts of chicken
  • 400 g can chopped tomatoes
  • 2 tbs tomato spread *
  • 1 lemon, finely chopped zest and juice
  • 1 wine glass of dry vermouth
  • and freshly ground black pepper

Braised Chicken &Tomatoes Directions

  1. Preheat the oven to 180 degrees C
  2.  1. Heat the oil in a casserole dish then sauté the onions and garlic until soft but not coloured. Add the chicken breasts and brown.
  3.  2. Stir in the rest of the ingredients and bring to a simmer. Place into the preheated oven for about 25 minutes or until the chicken is thoroughly cooked. Check seasoning and serve either hot or cold.
