We first experienced Giros in a bar in Germany then again at a German restaurant in Blandford Forum, Dorset. It is a pitta bread stuffed with tasty strips of meat and (if you want) served with a side salad. I'm not giving quantities, just add as much or as little as you want to eat.

  • diced lean pork
  • olive oil (see note)
  • chilli flakes, crushed
  • oregano
  • rosemary
  • paprika
  • marjoram
  • sliced mushroom
  • fresh basil

Giros Directions

  1. Mix together the oil, herbs and spices. Add the strips of pork and leave to marinade for a couple of hours or so, or even overnight. Heat a large, non-stick frying pan then tip the pork into the marinade mixture. Sauté on a medium high temperature for a couple of minutes until the pork has browned. Add the mushrooms and sauté until cooked.
  2. Serve hot in Pitta bread.
  3. Note: depending on the quantity of meat, start with just a couple of tablespoons of oil and you can always add more. You are aiming to coat the meat, NOT make a liquid marinade for the meat to sit in.
