Garlic & Herb Rub For Lamb

Always searching for a slightly different way of cooking a favourite dish I decided to try a rub which I also used as a marinade. Make this when herbs are fresh and tender. Quantities are difficult to prescribe - they really depend on the quantity of lamb, though as a guide this served two hungry adults!

  • 2 onions, halved & diced
  • 1 clove garlic, crushed
  • 2 tender, fresh bay leaves
  • sprig of rosemary, leaves only
  • salt & freshly milled black pepper

Garlic & Herb Rub For Lamb Directions

  1. Using either a hand blender or a food processor, pulse all of the ingredients together to make a paste. Rub over the lamb, place in a non-metallic dish, cover with cling wrap and chill overnight. Return the lamb to room temperature then slowly roast to your preferred stage of 'doneness'.
