Chocolate Fudge Cupcakes

Chocolate fudge cupcakes with chocolate fudge icing. Perfect for serving mid-afternoon or as an informal party dessert.

  • 50 g caster sugar
  • 50 g soft -light brown sugar
  • 100 g butter, softened
  • 2 eggs
  • 2 tbs sweetened condensed milk
  • 125 g S.R. flour
  • 1 tsp baking powder
  • Frosting
  • 25 g unsweetened cocoa powder
  • 60 g unsalted butter, softened
  • 120 g sifted icing sugar
  • 1 tbs sweetened condensed milk
  • 1 tbs unsweetened cocoa powder

Chocolate Fudge Cupcakes Directions

  1. Preheat oven to 180 degrees C
  2.  1. Using a hand mixer, cream together the sugars and butter until the mixture is light and fluffy. Beat in the eggs, one at a time then spoon in the condensed milk, mixing well.
  3.  2. Sift in the flour, baking powder and cocoa. Fold into the mixture, using either a spatula or metal spoon then divide between 16 paper cupcake cases. Bake in the pre-heated oven for about 15 minutes or until the cakes are risen and spring back when lightly pressed. Cool on a wire rack.
  6. 3. Combine the frosting ingredients, mixing well to a smooth consistency then spread over each cupcake, finishing with a decoration of your choice. I have used a tiny dried rosebud with a minature macaroon.
