Brunch Loaf

A perfect treat for a lazy brunch or simply enjoy with afternoon tea and particularly delicious spread thickly with country honey.

  • 700 ml cooled green tea
  • 2 tbs black treacle
  • 200 g All-Bran cereal
  • 60 g Weetabix cereal, crumbled
  • 250 g raisins
  • 100 g sugar
  • 250 g wholemeal flour
  • 4 tsp baking powder
  • 2 tsp powdered coffee

Brunch Loaf Directions

  2. 1. Dissolve 2tbs black treacle in the tea. Place the All-Bran, Weetabix, raisins and sugar in a mixing bowl and pour over the tea. Mix well then set aside.
  4. 2. Whilst the mixture rests, preheat the oven to 180 degrees C, grease and base line a 1kg loaf tin with kitchen parchment.
  5.  3. Sieve together the flour, baking powder and coffee then sieve into the cereal mixture and mix together thoroughly.
  7. 4. Using a spatula, tip into the prepared loaf tin, spreading evenly and smoothing the top so no fruit is visible. Place in the centre of the pre-heated oven and bake for about an hour until slightly risen and firm to touch. Remove and cool for 10 minutes before turning onto a wire rack.
  8. Store in an airtight tin or freeze in slices.
