Warm Green Lentils with Smoked Chicken Breast

For 2 people


  • 150 gms green lentils
  • 1 bay leaf
  • olive oil
  • 0.5 lemon
  • and pepper
  • 80 gms drained sunblush tomatoes ( aprox 10-12 pieces )
  • 0.5 tblsp each chopped flat parsley, basil and chives
  • Rannoch Smokery smoked chicken breast

Warm Green Lentils with Smoked Chicken Breast Directions

  2. Place the lentils in a pan with the bay leaf and a tsp salt. Cover with water and simmer for 20 mins. Drain, discard the bay leaf and tip into a bowl. Add the olive oil, lemon juice, tomatoes and herbs to the lentils and combine all together. Adjust the seasoning.
  4. Whilst the lentils are cooking place the chicken on an oven proof plate and cover with foil. Place in a 180C oven for 12-15 mins to heat through.
  6. Place a spoonful of lentils onto each of two warmed plates. Slice the smoked chicken and place on top of the lentils.
  8. Serve with a drizzle of oil or some balsamic reduction.
