Muscat Vanilla Apricots

Whilst almonds are a natural partner to apricots, the vanilla and Muscat add an extra layer of flavour and sweetness. Muscat is a sweet wine which is produced throughout the world. I particularly favour the flowery flavour of this wine in desserts, but do use any sweet wine of your own preference.

For 6 people


  • 1 kg apricots, stoned and quartered
  • 25 g flaked almonds
  • 1 vanilla pod, split lengthways
  • 100 ml Muscat wine

Muscat Vanilla Apricots Directions

  1. Place all the ingredients into a heavy based saucepan and stirring occasionally, gently heat over a medium heat for 20 minutes. The apricots will be soft and cooked but still retain their shape and texture. Remove from the heat. Cool in the pan then transfer to a dish to chill for several hours before serving with cream, crème fraiche or good quality vanilla ice cream.
