Almond Shortbread

When I worked at the patisserie in Fortnum & Mason I used to love displaying the fresh buttery shortbread and, of course, clearing up the broken bits too!

  • 150 g plain flour
  • 50 g cornflour
  • 125 g butter, softened
  • 25 g ground almonds
  • 75 g caster sugar
  • 50 g flaked almonds

Almond Shortbread Directions

  1. Preheat the oven to 180 degrees C / gas mark 4. Line a baking tray with parchment.
  2. 1. Sift the flour and cornflour together.
  3. 2. In a mixing bowl, cream the butter. Add the flour, ground almonds and sugar. Work the ingredients together.
  4. 3. Turn out onto a lightly floured surface and gently knead to make a smooth paté.  Roll & shape into a round, about 1/2 cm thick. Sprinkle the flaked almonds over the shortbread and lightly press onto the surface.
  5. Bake for about 25 minutes, in the pre-heated oven until pale golden. cut into slices while still warm.
  6. Add a sprinkle of brown sugar as the shortbread comes out of the oven - delicious!
