Chocolate Fudge Icing

This is a really rich and smooth icing which easily sandwiches together and coats two 20cm cakes. In fact, make extra and keep it aside for cup cakes. The secret of its success is in the beating. I like to use a counter top mixer with the wisk attachment - I can just wander away and forget about it for a few minutes, returning to a light airy icing, ready to use.

  • 200 g plain chocolate - look for at least 52% cocoa solids
  • 250 g butter, softened
  • 250 g icing sugar, sifted if necessary
  • 2 tbs liquor (optional)

Chocolate Fudge Icing Directions

  1.  1. Melt the chocolate, either in the microwave or over a pan of simmering water. Allow it to cool.
  2. 2. Beat the butter into the chocolate, add the icing sugar and continue to beat until glossy and light.
  3. 3. If using, beat in the liquor.
