Baked Cheesecake

This is the best cheesecake recipe I have ever used and, have now made it for so many years that I can't even remember who passed it to me... A huge thank you, whoever you are!

  • 75 g melted butter
  • 225 g crushed digestive biscuits
  • 450 g cream cheese
  • 225 ml creme fraiche
  • 150 g caster sugar
  • 40 g plain flour
  • 1 lemon, juice and chopped zest
  • 4 eggs, separated
  • 75 g sultanas, soaked for about 30 minutes in boiling water

Baked Cheesecake Directions

  1. Preheat the oven to 170 degrees C; Grease and line the base of a 23 cm spring form tin.
  2.  1. Mix the crushed digestives and butter together. Spread evenly over the base of the tin and chill.
  3.  2. Mix all the filling ingredients together except the egg whites and sultanas.
  4.  3. Whisk the egg whites until stiff. Using a metal spoon, fold a couple of spoonfuls into the filling mixture. Add the remainder of the egg whites and fold in. Strain the sultanas and fold in.
  5.  4. Place the spring form tin on a baking sheet (sometimes some of the butter trickles out when it is baking). Pour in the filling mixture and bake for 1 hour.
  6.  Chill; turn out of the tin just before serving.
  7. Hint: Either use a food processor to crush the biscuits, or put in a zip lock plastic food bag and roll with a rolling pin.
