Uncooked Chocolate Cake

I would like to thank my friend Dorothy who passed this recipe to me all those years ago when we lived in Oslo. My daughter was born there so it would be fitting to dedicate this recipe to Dorothy and Mike who put up with 9 months plus the following year listening (patiently) to my joys about motherhood!

For 8 people


  • 175 g plain chocolate
  • 3 tbs brandy
  • 150 ml cremé fraiche
  • 50 g icing sugar
  • 100 g unsalted butter, softened
  • 2 egg yolks
  • 50 g glacé cherries, washed, dried and chopped
  • 50 g sultanas
  • 50 g raisins
  • 50 g almonds, chopped
  • 175 g digestive biscuits, crushed
  • icing sugar to decorate

Uncooked Chocolate Cake Directions

  1. Lightly grease and line the base of a 20cm loose-bottomed cake tin.
  2. In a heat proof bowl over a pan of simmering water, gently melt the chocolate, brandy and cremé fraiche, stirring until melted. Cool. Sieve the icing sugar into a medium sized mixing bowl, add the butter and using an electric handmixer, beat until soft and creamy. Beat in the egg yolks. Add the cherries to the butter mixture along with the sultanas, raisins and almonds. Stir in the cooled chocolate mixture and crushed biscuits. Make sure all the ingredients are well mixed. Spoon the mixture into the cake tin and smooth the top. Chill overnight in the fridge.
  3.  Remove from the tin to serve. Sprinkle with icing sugar and serve with fresh fruit and cremé fraiche.
  8. If cherries aren't available, substitute dried fruit such as dates or apricots.
