Crunchy Chicken

A favourite of both my children.....and my mum! The variations to the topping are endless - add a variety of chopped herbs and spices at your will and it is also rather nice with finely sliced spring onions.

  • 4 chicken breasts, bonelessand skinless
  • 1 small packet ready salted crisps
  • of grated cheese, perhaps a mixture of a tasty cheddar and parmesan

Crunchy Chicken Directions

  1. Preheat the oven to 180 degrees C; line a baking tray with baking parchment (saves any cheese sticking to the tray!)
  2. 1. Trim any visible fat from the chicken then arrange on the baking tray.
  3. 2. Open the bag of crisps then crush in the packet. Add the grated cheese and shake well.  Press the coating on top of the chicken breast and bake for about 20-30 minutes until cooked.
