All-In-One Sponge Cake

A quickly prepared mixture which may be used for a straightforward sponge cake, Pineapple Upside Down Cake or an Apple Cake.

  • 120g soft margarine
  • 2 eggs
  • 120g casster sugar
  • 1 tbsp. water
  • 120g S.R. flour
  • 1 tsp. baking powder

All-In-One Sponge Cake Directions

  1. Preheat the oven: 170 degrees C for the large cake or 190 degrees C for the individual cakes. Grease and base line a 20cm round cake tin or place about 20 paper cups in muffin tins. Use an electric hand mixer or food processor. Use the margarine straight from the fridge.
  2. 1. Place all the ingredients either into the bowl of the food processor or into a medium mixing bowl. There is no need to beat the eggs, but roughly cut the margarine.
  3.  2. Mix for about 1 minute with the mixer or about 20-30 seconds with the food processor, until smooth. Be careful not to over mix.
  4. Tip the mixture into either the cake tin or muffin cases and bake for about 30 minutes or until a skewer comes out clean.
