Basic Sweet Bread Dough - traditional method

This is a basic recipe for traditional sweet dough. There is sufficient dough to produce two of the listed suggestions which only require half of this quantity.

  • 100 g butter or margarine
  • milk
  • 50 g fresh yeast
  • 50 mg ascorbic acid (vitamin C)
  • 100 g sugar
  • 800 - 1000 g white bread flour

Basic Sweet Bread Dough - traditional method Directions

  1. 1.Gently melt the butter or margarine together. Pour in the milk and allow to become 'just' warm. It should not feel either warm or cold to touch. Immediately pour into a mixing bowl. Crumble yeast into the liquid and add the sugar. Stir to dissolve. Add the ascorbic acid and stir. Leave until the yeast has started to produce air bubbles - it has now activated.
  2. 2. Work in enough flour to give a smooth dough. Knead for 10 minutes to make the dough really smooth and elastic. Allow to rest for 5 minutes then choose from two of the recipe options:
