Gingered Chicken Cakes With Coriander - Lime mayonnaise

These cakes are charged with flavour and versatility to either serve as a starter with salad or as an element of a canapé selection. Either way, serve warm.

  • 2 boneless, skinless chicken breasts
  • 2 tbs Worcestershire sauce
  • 1 cm fresh ginger, peeled & grated
  • 3 spring onions, white part only and finely chopped
  • 1 clove garlic, crushed
  • 1 dash tabasco sauce
  • 4 tbs mayonnaise
  • handful coriander, chopped
  • 1 lime, finely chopped zest & juice

Gingered Chicken Cakes With Coriander - Lime mayonnaise Directions

  1. Preheat the oven to 200 degrees C. Line a baking sheet with baking parchment.
  2. Place all the ingredients in a food processor and pulse until finely minced. With damp hands, divide and roll the mixture into 20 walnut sized pieces. Place on the baking tray, flatten each ball and shape into a cake. Cook for about 15 minutes until cooked through. Serve warm with a small amount of topping on each one.
