Crunchy Coated Turkey Escalope

From the kitchen to the table in a jiffy and even quicker if you prepare the escalopes in advance. This works equally well with chicken, simply choose your favourite herbs to add.

  • 4 batted-out turkey escalopes
  • seasoned flour
  • 50 g pre-prepared breadcrumbs
  • 30 g pre-grated parmesan
  • 1 tbs basil, chopped
  • 1 egg, beaten together with 1 tbs water
  • oil for cooking

Crunchy Coated Turkey Escalope Directions

  1. 1. Remove any visible fat or sinew from the turkey. Dust in plain flour.
  2. 2. Mix together the breadcrumbs, Parmesan and basil.
  3. 3. Dip the floured turkey into the beaten egg then coat with the breadcrumb mixture.
  4. 4. Heat the olive oil in a large frying pan and cook the escalopes for about 3 minutes on each side until crispy, golden and the turkey is cooked. Serve immediatly.
