Sweet Cardamom Rolls

Aromatic cardamom has a bitter-sweet, slightly lemony flavour and brings back memories of our time in Norway where it is used extensively in breads and pastries. I use a bread machine to make these soft rolls, though it is equally successful made by hand.

  • 1 egg, beaten & topped up to 380 ml with water
  • 1 tbs oil
  • 600g white bread flour
  • 1 1/2 tsp salt
  • 60 g sugar
  • 1 packet fast action yeast
  • 3 tsp ground cardamom
  • 1 egg, beaten for the glaze

Sweet Cardamom Rolls Directions

  1. 1. Tip the ingredients in the order they appear, into the bread machine (or according to your manufacturer's instructions). Activate the dough programme.
  2.  2.Turn the dough onto a floured board and cut into 16 evenly sized pieces. Lightly knead and shape into rolls then place on a baking sheet lined with baking parchment. Leave to rise for 1 hour in a warm place or until they have about doubled in size then preheat the oven to 200 degrees C.
  3.  3. Brush each roll with the beaten egg which will give a shiny glaze as they cook. Bake about 10 minutes until they are a light golden colour and have a hollow sound when lightly tapped.
